Determinación de la concentración de Coliformes totales y Escherichia coli, en carne molida en sitios de comercialización en la ciudad de Guayaquil

Resumen
El presente estudio de determinación de la concentración de coliformes totales y Escherichia coli, en carne molida en sitios de comercialización, mercados municipales, tercenas y centros comerciales en la ciudad de Guayaquil, los análisis se realizaron en el laboratorio de Microbiología del Instituto de Investigaciones de Recursos Naturales de la Facultad de Ciencias Naturales, se obtuvo como resultados la presencia de coliformes totales en mercados, obteniendo la mayor concentración de 2,98x106 UFC/g en el mercado norte y una menor concentración en el mercado del centro con 1.34x102 UFC/g, registrándose diferencias significativas entre los centros de expendio, así también resultados positivos para la presencia de E. Coli con concentraciones de 3.16x105 UFC/g, en las muestras de carne molida que se obtuvieron de los mercados y tercenas con 1.5x103 UFC/g que superan los niveles de aceptación establecida en la NTE INEN 1346, mientras que en los centros comerciales los resultados fueron negativos.
